I missed doing the Thai Chicken soup last week so we had it early this week. I love that one (and so did DH, I found him having thirds after he put Lia to bed)

Wed is a new one. We’ll see how that goes. I love Pineapple Cucumber salsa but have never put it on my salmon. We always do sweet salmons. The Kirby Cucumbers that they call for in the recipe looked horrid in the store yesterday. If I get a chance I’m going to try another store otherwise I have some seedless cucumbers that I purchased.

Wooohooo boy…off the wagon we go:) The holidays can really throw you for a loop. Plus I’ve had a number of clients to finish up work for so it’s been crazy in our neck of the woods. I’m going to try to get back on track – my body is hating me for all the crap that I’ve been putting into it.

Back in the groove! Made a great Shrimp and Corn Chowder last night which was sooo good since it was so freakin cold out (I know, it’s not even that cold yet…). The rest of this week looks great too – I’m excited!

I feel my motivation coming back! I spent yesterday prepping and pre-cooking and have a good handle on this week I think. I made a pot of bolognese that I’ll freeze and have the Korean BBQ beef marinating for tonight.

Monday: Korean BBQ Beef with Rice (this is the closest recipe – I used shaved beef and slightly different ratios but overall similar enough.)

Wed: Chicken, Pasta and Marcapone

A day late (which is better than last week where I completely missed!). It’s been hectic around here lately and my motivation is waining. I’m trying to get back in a groove but it’s tough. We wake up when it’s dark, go to bed when it’s dark and soon I’ll look forward to coming home in the dark too. Sigh..I love fall but i’m not so keen on winter.

So, as predicted, last week was pretty much a total FAIL in following the menu. I figured it might be with what was going on. So, there are some repeats this week because I really wanted to try them but didn’t get around to it last week.

This week should be better and I’m committed to getting back on the clean eating wagon – I’m all kinds of sluggish because I’ve been lax about what I’m eating.

This week has the potential to be a total FAIL on the following the menu part. I have co-workers in from out of town and as such may end up entertaining them. I tried to plan the easy stuff for those days so that DH can just follow along. We’ll see…

Also, it appears that this week’s menu is not low carb because I’ve planned pasta twice in one week. Oh well, sometimes you win, sometimes you lose. The rest of the week is better.

So I missed posting the meal plan for last week because we were at the beach. It doesn’t mean that I didn’t plan though. We went to the beach with a full menu planned – both lunch and dinner. We stuck to it for the most part (because I worked in ample “eating out” options) but did cook at home at least 1/3 of the time (and I’d say 90% of our lunches were at home). So, I only gained 3lbs while at the beach (thanks to an ample supply of margaritas and daiquiri mix).

This week is a “getting back into the swing of things” week. I have not made it to the grocery store yet so the earlier meals are based on what I have in the kitchen. Hopefully I can get out to the store tomorrow.

I’m also going to skip sat/sun most times since we’re out and about and have no idea what we’re doing.

Dinner:
Sun – Pizza
Mon – Pasta and Sauce (crockpot bolognese that I’ve frozen)
Tues – Kung Pao chicken with Zoodles
Wed – Out (we’re running around this evening to appointments)
Thurs – Sweet Honey Salmon with Asparagus
Friday – Chicken Corn Chowder

Lunch:
Mon – Out
Tues – Banana Sushi
Wed – Chicken Pesto Sandwich (just chicken breast shredded with Kirkland Pesto mixed in, a little water cress and some mozzarella and we’re good)
Thurs – Spinach, Strawberry, Goat Cheese, Pecan Salad (with Edamame)
Friday – Salami Wraps (just salami, mustard and cheese – no bread)

This one is being done on the fly! We were out all weekend and I didn’t get to sit down like normal and plan things. Instead I took a 10 min trip to the grocery story with Noah and tried to pick things up that I think I can make into something good.

So things don’t always go as planned. Saturday night dinner was a no go. I forgot to actually buy the ribs when I was a the store! It worked out for the better though, we ended up with friends over during dinner and didn’t actually eat until very late.

R: Steak salad with shish kabob left overs

I had to laugh – I had a full grocery cart before evening making it past the veggie section of the store. I do 90% of my shopping on the outer walls of the store and at least 60% of that is the veggie section so luckily the rest fit with a little creative placement. We love our fruits and veggies here!

This seems to be the only thing on this blog that I can be consistent with:) This past week kicked by butt for some reason. Nothing big, just lots of little stuff I guess. Plus it’s so incredibly nice out these days that we stay out way into the evening and totally mess up bed time. Eh..oh well…enjoying life and living in the moment:)

So as part of my new “pattern” I’m making more of an effort in sitting down on Saturdays and making up the meal plan for the week. I figure since I’m putting forth the effort, I should share. I’m always looking for inspiration and have found it many times on others peoples blogs.

I’ll include recipes where I have them. Many I’m just making it up as I go:)

So here’s the plan for this week:

M: Mason Jar Pesto chicken and spinach salad (No recipe, just spinach, veggies, pesto and a little EVOO and Rice Vinegar)
T: Thai Spinach Salad
W: Quinoa Veggie rolls
R: Out with co-workers
F: Banana Sushi (banana and peanut butter wrapped up in a whole wheat tortilla)

Dinner:
Sat: Roast Chicken with something out of the pantry…lord knows what yet.
Sun: Crock Pot Pulled Pork Sammies with Grilled Corn on the Cob
M: Chicken Veg Soup (using left over roast chicken)
T: Salmon and Grilled Peaches
W: Clean Alfredo
R: Fish Tacos with mango salsa
F: Pizza
