I feel my motivation coming back! I spent yesterday prepping and pre-cooking and have a good handle on this week I think. I made a pot of bolognese that I’ll freeze and have the Korean BBQ beef marinating for tonight.
Mon: Sour dough and chicken sammy
Tues: Sour dough and chicken sammy
Thurs: Left over chicken and pasta
Sun: Pork Tenderloin with Pears and Shallots with Quinoia (this one is a family favorite!)
Monday: Korean BBQ Beef with Rice (this is the closest recipe – I used shaved beef and slightly different ratios but overall similar enough.)
Tues: Mom Out – Pasta and Sauce for Daddy
Wed: Chicken, Pasta and Marcapone
Thurs: Pineapple Chicken Quesedilla
Fri: Trick or Treat Tacos!
